For the Pie:

500g minced meat (beef or lamb)

1 onion, finely chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp dried thyme

Salt and pepper to taste

1 pack of shortcrust pastry

1 egg (for glazing)

For the Mash:

800g potatoes, peeled and chopped

100ml milk

50g butter

For the Liquor Sauce:

2 tbsp chopped fresh parsley

300ml vegetable stock

1 tbsp cornflour mixed with 2 tbsp water (to thicken)

Salt and pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- In a pan, sauté the onions until they’re nice and soft. Add the garlic and stir for about a minute.
- Throw in the minced meat, Worcestershire sauce, thyme, salt, and pepper. Cook it until the meat is browned.
- Roll out the shortcrust pastry and line a pie dish with it. Fill it with the meat mixture and cover it with another layer of pastry. Make sure to crimp those edges like a pro!
- Brush the top with a beaten egg for that golden finish and pop it in the oven for 25-30 minutes.
- In the meantime, boil the potatoes until tender, then mash them with butter, milk, and salt until creamy perfection.
- For the liquor sauce, bring the vegetable stock to a simmer, add in the parsley, and stir in the cornflour mix to thicken. Season to your taste.
